Directions:
  1. Heat oil to 325ºF.
  2. Combine the ingredients for the Seasoned Dry Mix in a medium-sized bowl; set aside.
  3. In a large bowl, combine all ingredients for the Crispy Wet Mix whisking together the egg and butter milk; gradually add the dry ingredients to it. This batter must be thin.
  4. Dip chicken in the Seasoned Dry Mix, then into the Crispy Wet Mix, allowing the excess to run off well. Then dip once more in the Seasoned Dry Mix.
  5. Lay chicken loosely in the hot oil. Turn the chicken only once or twice while it cooks. When it’s done, the chicken will rise to the top of the pan.
