Gluten-Free Pizza Base – ARTICLE 31396
BASIC FORMULATION INSTRUCTIONS (50 lb. Serving Size)
For Dough Formulations Blend with:
- 42.5 lbs. of Choice of Dairy/ Non-dairy/Water/Other Liquid
- 10 lbs. of Oil (Olive Oil recommended)
- 2.5 oz. of Choice of Herbs & Spices (optional)
Bake at 450°F. Add all ingredients in the mixer and knead until mixture leaves the sides of the bowl. Turn out dough onto a surface lightly floured with Gluvana Complete™ Gluten-Free Pizza Base and begin your preparation.
General Tips:
- Gums (xanthum and/or guar) can be used to add elasticity to dough formulations if needed. Use up to ½ lb. of gum per 50 lbs. of dough.
- Avoid contaminating gluten-free applications with liquids, sauces and fillers that are not gluten-free.
