Gluten-Free All Purpose Base – ARTICLE 61051

BASIC FORMULATION INSTRUCTIONS (5 lb. Serving Size)

For Batter Formulations (rolls, buns, scones, quick breads and muffins) Blend with:

Scoop mixture into pan wells.  Bake at 425˚ for 10-15 minutes, or until golden brown.

For Dough Formulations  (including Pie and Pizza Crusts) Blend with:

Knead vigorously until mixture leaves the sides of the bowl.  Turn out dough onto a surface lightly floured with Gluvana Complete™ Gluten-Free All Purpose Base.  Press or roll into desired crust size and shape.  Bake at 450˚  until done./  For crusts par bake for 10 minutes at 425˚and allow to cool.  Add toppings/fillings to the shell.  Bake at 450˚ for 15 minutes or until toppings/fillings are done.

For Fresh Noodle Formulations Follow these Instructions Using:

Make a well using Gluvana Complete™ Gluten-Free All Purpose Base in a bowl or on a counter surface. Add eggs to the middle of the well and lightly whisk them until beaten. Edge the All Purpose Mix into the center of the egg until incorporated. Add water a little at a time until mixture becomes workable dough. Lightly dust surface with Gluvana Complete™ Gluten-Free All Purpose Base and place the dough. Knead dough until it comes together and is smooth. Gather into a ball and divide into fourths. Using a rolling pin floured with Gluvana Complete™ Gluten-Free All Purpose Base, roll out until thin enough to put in a pasta maker or cut into pasta shapes. To use fresh, add the noodles to boiling, salted water for 1 to 2 minutes, or until done, depending on the thickness of the noodle.

For Sauce Formulations Follow these Instructions Using:

Heat the milk or other liquid until hot. Melt butter/fat on low temperature in saucepan until fully melted. When melted, stir in Gluvana Complete™ Gluten-Free All Purpose Base. Cook to desired consistency. Using a whisk, gradually add heated milk or other liquid until fully combined. Allow mixture to just reach a boil at medium heat, whisking constantly. Remove from heat and gradually stir in salt and other seasonings/flavorings or fillings (e.g.  grated cheese).

For Desserts and Other Formulations Follow Your Recipe Substituting Gluvana Complete™ Gluten-Free All Purpose Base 1:1 for all-purpose wheat flour.  Adjust any extra salt and sugar to taste.  Additional leavening not required.
